Ingredients
  

  • 3 large chicken breasts, cut in half
  • 2-3 tbsp Creole or Cajun seasoning (or homemade mix: 1 tsp paprika, 1 tsp garlic powder, 1 tsp onion powder, 1/2 tsp cayenne pepper, 1/2 tsp oregano, 1/2 tsp black pepper)
  • 12 strips bacon
  • Bacon grease for browning
  • 1/4 cup soy sauce
  • 1/4 cup Worcestershire sauce
  • 2/3 cup pure maple syrup
  • 1 1/2 tbsp Dijon mustard
  • 1/4 tsp cayenne pepper
  • 7 slices Colby Jack cheese

Instructions
 

  • Set oven temperature to 175°C/350°F.
  • Put some Creole or Cajun seasoning on both sides of the chicken breasts.
  • Cook bacon until 70% done, then set aside any rendered fat.
  • In bacon fat, brown chicken for two minutes on each side.
  • Combine the soy sauce, cayenne pepper, maple syrup, Dijon mustard, and Worcestershire sauce in a bowl.
  • Transfer chicken to a baking sheet, setting aside 1/4 cup of sauce.
  • Bake chicken for 30 minutes.
  • Top each chicken piece with a slice of Colby Jack cheese and pre-cooked bacon.
  • Pour reserved sauce over chicken.
  • Bake for a further 8 to 10 minutes, or until the cheese has melted and the chicken is thoroughly cooked.
  • Serve hot and enjoy!
